Best Pancakes (Gluten Free)

Ingredients
  1. 1/4 cup Amaranth Flour
  2. 2 Tbsp Coconut Flour
  3. 1/2 cup Brown Rice Flour
  4. 1/4 cup Potato Starch (or Tapioca or Corn)
  5. 1 Tbsp Baking Powder
  6. 1/2 tsp Baking Soda
  7. 1 cup milk, any kind
  8. 1 Tbsp Apple Cider Vinegar
  9. 2 Eggs
  10. 2 Tbsp Oil
  11. Extra oil for pan
Instructions
  1. Add vinegar to milk and set aside. Set nonstick pan over medium heat.
  2. Whisk dry ingredients together. Whisk together eggs, milk & oil.
  3. Add wet to dry. Stir until combined nicely.
  4. Brush oil onto hot pan. Ladle batter into pan & cook pancakes till bubbles burst & leave little holes. Edges of pancakes will look dry & set. Flip. Cook till golden. Enjoy!
