Ingredients
  1. 2 cups torn green leaf lettuce
  2. 1/4 cup chopped cucumbers
  3. 1/4 cup chopped yellow peppers
  4. 2-3 Tbsp grated carrots
  5. 1/4 cup raw grated beets
  6. 1 Tbsp broken pecan pieces
  7. 2 tsp dried cranberries
Dressing
  1. 1/4 cup Udo's Oil
  2. 1/4 cup organic apple cider vinegar
  3. 2 Tbsp maple syrup
  4. 1 tsp any mustard
  5. 1 tsp dried herbs (oregano, thyme)
  6. 1/2 tsp salt
Instructions
  1. Build salad on a plate - lettuce, cucumbers, peppers
  2. Top with grated carrots & beets, pecans and cranberries
  3. Combine all ingredients for dressing in a sealable container & shake till well blended
  4. Spoon 2-3 Tbsp of dressing over salad.
  5. Enjoy!
Notes
  1. Store leftover dressing in the fridge.
